In fact, when Disney World replicated this ride a few years back, they did include the single-rider line. There’s even a sign for it. I asked a cast member about this and they just said Disney World chooses not to use it.
So, if you are comparing the Disneyland Paris vs Disney World Ratatouille ride, know that the single-rider line is disabled in Disney World. However, it is up and running at EuroDisney.
Hollywood Studios Single Rider Rides
Hollywood Studios features two single-rider attractions:

Admittedly, this is one of the few rides that I will not go on. I did it decades ago, but my stomach can’t take the 0-60 mph launch anymore.
Therefore, when it’s just my daughter and me, she always goes through the single-rider line. This line isn’t as fast as some of the other single-rider lines. It still usually takes her 25 minutes before she comes out.

True story: My daughter kept begging me to go on this ride with her, saying it wasn’t as scary as Space Mountain. Really, she tried convincing me of that and I believed her.
Well, trust me when I say, this ride is a lot bigger and more frightening.
I was not prepared for the total darkness where you are descending backward down the mountain with intense turns.
Needless to say, from that point forward, she always uses the single-rider line for Expedition Everest. Especially when it’s just the two of us.

Unfortunately, Magic Kingdom does not have any single-rider lines. But, remember I mentioned there’s a quasi-single rider line?
Well, in Space Mountain, once you are in the area where the rockets are boarding, there is a sign that says if you are a single rider, let the cast member know.
I had originally gone into the queue with my daughter, then when I saw that sign, I backed out. The cast member took both of us up to the front, showed me the exit door and took her to the front of the line to fill in on not full rockets.
So, while it does not have a dedicated line, Space Mountain cast members will direct you to an area to wait for single riders.
